Daniel occupies the ground floor of the former Mayfair Hotel on East 65th Street, a few steps off Park Avenue, in rooms that once housed Le Cirque during Daniel Boulud's years as its executive chef. Since opening in 1993, DANIEL has earned its place among the pillars of New York City's dining scene, built on refined European cuisine, a formidable cellar and a style of hospitality that favours polish over noise. The restaurant moved here from its original home on East 76th Street in 1998, inheriting a dining room with real history attached to its gilt-edged walls. It holds One MICHELIN Star, the honour under which it operates today, and remains one of the few New York addresses still built entirely around the long French tasting menu, the tableside flourish and the trolley of cheese. Jackets are expected, reservations are hard-won, and the name on the door is still the chef who built it.

In the former Mayfair Hotel, on the old site of Le Cirque, Boulud's grand French tasting menu has run since 1993.

01The room and the setting

The dining room sits on the site where Le Cirque entertained Manhattan for decades, and Daniel's interiors still carry that sense of occasion — gilded columns, high ceilings and a hush that announces a special-occasion restaurant the moment the door closes behind you. Located in the former Mayfair Hotel on Park Avenue – the original site of Le Cirque – DANIEL is steeped in French culinary history, a lineage the current room makes no attempt to hide. A separate, more relaxed lounge offers à la carte dining for guests who want the kitchen's cooking without the full tasting-menu commitment, while the Bellecour Room handles private events, from intimate dinners to larger celebrations with menus tailored to each party.

02The chef

Daniel Boulud came to the United States from Lyon in 1982, after training under Roger Vergé, Georges Blanc and Michel Guérard — a trio of French titans who shaped his instinct for precision married to generosity. He built his reputation in New York, initially as a chef and more recently as a restaurateur, rising through the Polo Lounge and the Hotel Plaza Athénée before taking the reins as executive chef at Le Cirque, where he remained until 1993, when he opened his eponymous restaurant. Six James Beard awards and a Diners Club Lifetime Achievement Award from the World's 50 Best Restaurants followed over the ensuing decades. In the kitchen today, Executive Chef Eddy Leroux and Corporate Pastry Chef Shaun Velez carry the house style forward, working under Boulud's continued oversight as chef-owner, with General Manager Brian Willoughby running the floor.

Insider tip

Dinner Tuesday–Sunday, 5–9.30pm. Formal attire strongly recommended; book well ahead.

03The cooking

The kitchen builds its seven-course tasting menu around a handful of recurring ideas — a terrine-style opener, a fish course treated with classical technique, a pasta course that leans into French-Italian overlap, and a main of game, lamb or beef finished with a reduction sauce rather than a foam. A typical autumn tasting runs from a Mosaic of Poultry with horseradish-poached quail egg through a Dover Sole "Florentine" with matsutake mushrooms and sauce vin jaune, to an Elysian Fields Farm Lamb Saddle with minted coco de Paimpol beans, closing on a choice between a fig dessert with yuzu crème fraîche ice cream or a dark chocolate Deltora with coffee bavarois. A full vegetarian tasting menu runs in parallel, built on dishes such as Norwich Meadows Farm fennel with saffron potato rouille and Montana beluga lentils with roasted salsify.

04What to order

Guests on the prix fixe can start with the Atlantic deep-sea red crab with celtuce and calamansi emulsion, move through a New Zealand langoustine with butternut squash and black olive musto, and finish on the Scharbauer Ranch Wagyu beef striploin, binchotan-charred and served with pomme darphin and sauce Bordelaise, or the foie gras-stuffed Highland Farm venison with pomegranate-braised red cabbage. For those who want to push further, caviar service is offered as a supplement, with Royal Ossetra and Golden Imperial Ossetra both available by the 50-gram portion.

05Wine and drinks

The cellar leans on Rhône and Burgundy, with a Champagne programme substantial enough to anchor a meal on its own, overseen by Head Sommelier Erin Healy. Both the tasting and prix fixe menus come with optional wine pairings, scaled to the length of the meal, for guests who want the sommelier's narrative running alongside the kitchen's.

06When to go and booking

Daniel serves dinner Tuesday to Sunday, 5pm to 9.30pm, and reservations are taken well in advance given the size of the room and the length of the tasting format. Formal or business attire is strongly recommended, and the restaurant does not accommodate athletic wear, shorts, sandals, ripped jeans or strollers — a dress code consistent with the restaurant's old-school sense of occasion. Reservations run through the restaurant's own booking system, and private events in the Bellecour Room can be arranged separately through the events team.
