formel B occupies a corner of Vesterbrogade on the border of Frederiksberg and Vesterbro, a few minutes' walk from Copenhagen's town hall square, and for more than two decades it has worked to a format rare among the city's starred addresses: rather than a single fixed tasting menu, guests build their own evening from a seasonal card of eleven to thirteen dishes. Kristian Arpe-Møller and Rune Amgild Jochumsen took over the restaurant in 2003, barely out of their twenties, with ambitions set on a Michelin star; it arrived the following year and has never left, making formel B the longest continuously starred restaurant in Copenhagen. The dining room trades white linen for raw wood tables and an unhurried, conversational service that owes more to a good local dining room than to formal gastronomy, while the kitchen keeps a French backbone — reduction, butter, acidity — built from small Danish producers. It holds one MICHELIN Star.

A raw-wood dining room on Vesterbrogade where guests build their own five-course menu from a seasonal card.
01The room and the setting
Inside, the classic white tablecloths of fine dining give way to raw wood tables, and the stiff, formal service once typical of a Michelin address has been replaced by something warmer and more direct. The ambition, on the restaurant's own terms, is an evening that still delivers gastronomy without asking guests to perform for it — no dress code anxiety, no hushed ceremony between courses. A glass-fronted cellar is visible from several tables, stacked with the Burgundy that has defined the wine list since the restaurant's earliest years, and it is as much a part of the room's character as the bare wood underfoot.
02The chefs
Kristian Arpe-Møller has shaped formel B's gastronomic direction for most of its two decades and still works the pass from morning to evening; in recent years he has pushed the kitchen toward dishes that balance a modern edge with the classical depth the restaurant built its reputation on. His partner, Rune Amgild Jochumsen, trained as a chef too — the two met that way before founding the restaurant together in 2003 — but today runs the dining room and the cellar, a collection assembled over more than a decade and treated by the house as its proudest asset. Burgundy, unsurprisingly, dominates it, alongside a run of avant-garde natural producers chosen for the same reason as the food: because they taste exactly as they should.
Insider tipClosed Sundays; dinner only, last order 22:00; special-occasion pricing.
03The cooking
The card itself is dynamic and consists of 11-13 courses that are changing with the seasons produce and mood of the kitchen, and as a guest you can select a five course menu of your own choosing — mixing a shellfish course with a vegetable dish, say, or doubling up on meat if that is the appetite of the evening. Groups of six guests or more will have a selected menu by the headchef, who otherwise leaves the architecture of the meal entirely to the table. In October 2026 the card ran from grilled Danish mackerel with white currants, elderflower and fennel garum, through a Norwegian hand-dived scallop with Danish seaweed, koji and citrus bouillon, to a whole celeriac from Kiselgården dressed in winter truffle and Vin Jaune sauce, roasted turbot on bread with braised oxtails and parsley-garlic sauce, and grilled Imperial pigeon with timut pepper, Danish blackberries and cherry sauce.
04What to order
The dessert to order, if indecision strikes, is the sea buckthorn en surprise — one of formel B's signature dishes and a fixture on the card for years, built around layers of crisp meringue. Alongside it, the roasted turbot on bread with braised oxtails and parsley-garlic sauce and the Gold Selection caviar with baked beetroot, sour cream and almond oil are two of the dishes most likely to turn up on any given night's five, alongside a finishing plate of French raw milk cheeses served with Danish rye bread.

05Wine and drinks
The cellar is priced to be shared rather than hoarded, with avant-garde natural wines sitting alongside elegant Burgundy classics on a list Rune Amgild Jochumsen has spent over a decade assembling.
06When to go and booking
formel B serves dinner only, Monday to Saturday from 17:30 to midnight with last orders at 22:00, and is closed on Sundays. Because guests assemble their own five courses rather than following a set script, it suits a celebration where not everyone wants the same plate — the restaurant positions itself, fittingly, as a special-occasion table rather than a nightly habit, booked through its own website.
