Iniala Valletta occupies four honey-stone townhouses raised along St Barbara Bastion, the fortress wall that drops straight down into Valletta's Grand Harbour inside the city's UNESCO World Heritage perimeter. Mark Weingard's Iniala Group opened the hotel in November 2020, and within six months its rooftop restaurant had already won a MICHELIN star; by 2024 the hotel itself had become the first in Malta to receive two MICHELIN Keys, awarded in the Guide's debut selection for the country. It has since held Malta's only Forbes Five Star rating for five consecutive years. The 33 rooms, suites and residences spread across restored palazzos, vaulted cellars and rooftop terraces, but the address is defined as much by its table: on the fourth floor, ION Harbour by Simon Rogan is Malta's only two-MICHELIN-starred restaurant, looking past the bastion walls toward the Three Cities across the water.

Four restored 15th-century townhouses on St Barbara Bastion, overlooking the Grand Harbour and the Three Cities, with ION Harbour by Simon Rogan on the rooftop.
01The house
Architect Paul Camilleri led the restoration of the bastion's fortress-side houses, while three design studios shaped the interiors: Malta's own DAAA Haus, Istanbul's Autoban and Madrid's A-cero, each applying its own language to balconies, courtyards and the vaulted ceilings below street level. Greta Design, run by Greta Apap Bologna, joined later for the newer wings and for a recent refresh of the restaurant itself.
Since 2026 the hotel has been mid-expansion, adding wings, restaurants and a wellbeing concept across the surrounding streets under general manager Claudia Schwarze, who previously worked at Aman Venice and Amanpuri. Her service style draws on three Thai principles, Metta, Nam Jai and Sabai, loving-kindness, generosity and tranquillity, now woven through how the hotel is run.

02Rooms and suites
The 33 keys are split across distinct wings rather than one block. Harbour House, the original building, holds the bulk of the suites and residences, from compact City View Suites to the two-bedroom Lucija Grand Pool Residence with its own courtyard and plunge pool. Hideaway offers smaller, eclectic rooms built as a retreat behind a Maltese balcony, while Solis, a restored palazzo nearby, rises to a rooftop pool and panoramic dining above the rooftops. Magistero, due in 2027, will add architectural suites built from raw stone and open volumes rooted in the city's heritage.
Insider tipBook ION Harbour weeks ahead; lunch is Fridays only. Guest transfers run by electric London-style cab.
03Where to eat
ION Harbour is Simon Rogan's first restaurant outside Britain, brought to Valletta by the chef behind the three-MICHELIN-starred L'Enclume in Cumbria. Rogan took over the kitchen after a four-hands dinner in October 2022 and has since increased his on-site presence; day to day, the pass is run by executive chef Oli Marlow, who has worked alongside him for more than six years. The dining room reopened in autumn 2026 after a refresh led by Greta Apap Bologna, with half-moon tables by Imperfetto Lab designed to let couples sit side by side facing the harbour, taupe finishes echoing the limestone bastions outside, and banquettes reupholstered in deep navy.
The kitchen's sourcing runs deep into the islands: spearfishermen and a third-generation salt farmer in Gozo supply the pass, alongside a forager who identifies native plant varieties in the wild. Head of sustainability Keith Abela develops items such as Xemxun cheese from local goat milk and turns kitchen surplus into kombuchas and syrups. Two further concepts are arriving across the Magistero and Solis wings: SiR by Simon Rogan, and Anaalā Valletta, a Thai rooftop restaurant guided by chef Ian Kittichai that takes guests through a different region of Thailand each evening.

04The bar
Ark Lounge is the quieter counterpart to the rooftop, a room built for pausing rather than performing: classic cocktails and a considered wine selection by day, coffee, tea and a daily offering of cakes through the afternoon. For something more removed, guests can take ION at Sea, a private dining experience aboard a Riva 44 yacht out on the Grand Harbour.
05Spa and wellbeing
Within Spa, previously known as Essensi Spa, sits within the hotel's original stone vaults below street level, with a heated pool, sauna and private single and double treatment rooms for guests travelling together. Within Performance, the hotel's gym, covers strength and recovery work above ground.
In October 2026, during the WTTC Global Summit in Valletta, Iniala unveiled WITHIN, a 12-discipline longevity programme built with medical partner St James Hospital. It opens with a full physical assessment, a blood test, body-composition reading and a PNOĒ metabolic test that analyses breath during exercise, before guests move into spa, fitness, nutrition and recovery protocols.
06The neighbourhood
St Barbara Bastion sits inside Valletta's fortified, UNESCO-listed old town, with the Grand Harbour immediately below and the Three Cities of Cospicua, Vittoriosa and Senglea visible across the water. Guests move through the city in the hotel's own electric, London-style cabs, and staff can arrange private cultural access, including a private tour of the National Library of Malta.
07Making the most of a stay
ION Harbour seats around 50 covers and books out weeks in advance; lunch runs only on Fridays, from 12.30pm to 2pm, with dinner served nightly from 6.30pm to 8.30pm. A credit card is required to hold a table, and cancellations inside 48 hours are charged in full. The hotel's own sustainability measures are worth knowing too: water is filtered on site through a Nordaq system and served in reusable glass bottles, and linens are refreshed only when guests choose to, rather than as routine.
