Insieme – Pagano's quiet table that caught Michelin's eye

Behind Corso Vercelli, a couple's bistro pairs pastel dining rooms with a market-led Mediterranean menu — and a recent mention among Lombardy's MICHELIN Guide watch-list is turning heads.

On a residential street in the Pagano quarter, a short walk from the shop windows of Corso Vercelli, Insieme has quietly built a name since opening in January 2019. It is the work of a couple: Alessandro Garlando, the Milanese-born chef, and Federica Caretta, originally from Puglia, who runs the dining room and the wine list. Their project sits deliberately in the middle ground of Milan's dining scene — not a trattoria, not a tasting-menu temple, but a market-driven kitchen with an open pass, pastel-coloured walls and a menu that changes with the seasons and with what its small producers bring in. Insieme is selected in the MICHELIN Guide, its cooking listed under Contemporary and Italian Contemporary, and the address has recently been named by local press among the Lombardy restaurants the Guide's own scouts are said to be watching ahead of the autumn star announcements — a reputation built one risotto and one braised veal cheek at a time.

01The room and the setting

The dining room plays on contrasts rather than conformity. Walls are painted in soft sky blue and pastel pink, a decorative choice one reviewer traced to the founders' own split roots between northern and southern Italy. The pastel rose and blue walls meet tables in fir wood that bring a Nordic touch, while sections of raw, unfinished wall hint gently at an industrial register without overdoing it. At the back, a tall bottle rack doubles as a bookshelf-like feature wall, filling most of the space behind the last tables.

The kitchen itself sits behind glass, in full view of the room, where fresh pasta and artisanal sauces are made to order. Guests can choose how they want to experience that theatre: highly personalised surroundings, open kitchen, three types of seating — classical, counter, and convivial. It is a room built for conversation as much as for the plate, which is rather the point of the name.

02The chef and the room

Alessandro Garlando, born in Milan in 1991, built a career across domestic and international kitchens before settling on a simple but distinctive style, rooted in local tradition and the broader Mediterranean identity. His own words on the matter are blunt: good cooking starts with ingredients worth falling in love with, because flawed produce ruins a dish however skilled the technique.

Insider tip

Closed Mondays; Sunday lunch only; book ahead by phone or WhatsApp.

Federica Caretta runs the front of house. Born in Apulia in 1993 and Milanese by adoption, she came to the trade after two degrees in economics, choosing the dining room as her own territory. In practice that means she also steers the wine list: attentive and professional service, guided by the patronne, accompanies guests even in choosing wines by the glass, matched to the dishes on offer. The two have run the place together, in work and in life, since January 2019.

03The cooking

The kitchen describes itself as cucina di mercato — market cooking. A selection of Mediterranean products, rooted in the territory, is lifted with the occasional surprise ingredient, forming a fresh, dynamic proposal in a mid-range bracket still scarce in Milan. That positioning — more ambitious than a neighbourhood trattoria, more relaxed than a tasting-menu address — is what first drew attention to Insieme when it opened, and it is why the kitchen still leans on daily specials alongside a core menu.

The ambition shows in dishes that sit closer to fine dining than the bistro label suggests. In a part of Milan with little foodie traffic, the couple has built a warm, family-run room with a surprisingly evolved menu, including a Carnaroli riserva risotto with saffron, tongue, bordelaise sauce and parsley. It is the kind of plate that explains why Lombard press recently flagged the address among restaurants the Guide's inspectors are said to be tracking ahead of November's new star announcements.

04What to order

The risotto course is where the kitchen's classical training meets its taste for contamination: alongside the saffron-and-tongue riserva, there is a more traditional risotto alla milanese with Norcia sausage and raspadura. Pasta is made in-house daily, offered simply as pasta fresca del giorno rather than a fixed, printed recipe.

From the sea, tempura-fried baccalà comes with a cream of fava beans, chicory and Taggiasca olives — a dish that sums up the kitchen's Mediterranean bent without leaning on cliché. On the meatier side, the room is known for a braised veal cheek served with potato purée and its own cooking juices, a dish built for the slow, convivial pace the owners say they are after.

05The neighbourhood

Insieme sits on Via Giovanni Rasori, a quieter, parallel street just off Corso Vercelli, in an area between Pagano and Conciliazione, in a residential and elegant pocket near Corso Vercelli's shopping strip. It is not the most obvious food destination in Milan — a part of the city with little foodie footfall — which only sharpens the sense of discovery when the dining room, visible from the street through its glazed kitchen, turns out to be this considered.

The address is well served by public transport: Via Rasori 12, in Pagano, is reachable on the M1 metro line and trams and buses 10, 16, 61, 67 and 68. Corso Vercelli itself remains one of the city's reference points for shopping, so an evening at Insieme pairs easily with an afternoon spent along its storefronts.

06When to go and booking

The restaurant keeps a tight, deliberately uncommercial rhythm. It serves dinner from Tuesday to Saturday, 19.30 to 22.30, and opens only for lunch on Sundays, from 12.30 to 14.30; Mondays are closed. Tables can be booked through the restaurant's own online form, or by calling or messaging the same number on WhatsApp — a detail that fits the informal, personal tone the owners have cultivated since day one.
