Behind a street door with no sign, two blocks off Lincoln Road Mall, Mister O1 Extraordinary Pizza has spent a decade building its name purely on what comes out of the oven. When chef Renato Viola opened the first restaurant in 2014, originally under the name Visa-O1, inside a nondescript office building just off Lincoln Road, he had little confidence that diners would find their way past the lobby of what was then a tiny, windowless room. Word of mouth did the rest: Miami New Times gave the pizzeria its Best Pizza title in 2016, and what started as one address has since grown into a small chain across Florida, Texas and Georgia. The dough still rests for 72 to 96 hours of natural fermentation with no added sugar, and the kitchen still turns out Viola's star-shaped pies, including the ricotta-pocketed Star Luca that won him two Pizza World Championship titles in Monte Carlo. Mister O1 is Selected in the MICHELIN Guide.

A one-room pizzeria behind an office-building door, home of the 72-hour dough and the star-shaped Star Luca.
01The room and the setting
Mister O1 gives nothing away from Michigan Avenue. When Renato Viola envisioned the restaurant, it was a tiny, windowless pizzeria tucked within an unassuming office building on South Beach, and skepticism about the location abounded among everyone except him. The original address still holds a special place in his story: a hidden spot within an office complex, accessible only to those in the know, with no signage to hint at its presence.
Past the lobby, the dining room settles into what one food writer described as a modern yet cozy interior where clean lines meet rustic accents, the kind of space that lets the pizza, not the architecture, do the talking. The burrata bar and the pizza oven sit in full view, the only real decoration in a room built for eating rather than lingering.

02The chef
Renato Viola grew up in Agropoli, on Italy's Cilento coast, where his family's dedication to good food nurtured his early fascination with pizza. He was apprenticing with Italy's best pizza chefs by the age of eleven, and years of competing across Italy and Europe earned him two Pizza World Championship titles in Monte Carlo, the competition that produced his star-shaped Star Luca pizza, its points formed from ricotta tucked into dough pouches at the edges. That record of achievement qualified him for the O-1 visa, the US category the government reserves for individuals of extraordinary ability, a phrase that gave the restaurant its working name before trademark issues forced the short switch from Visa-O1 to Mister O1.
Insider tipWalk-ins only, no reservations; busiest after 8pm, so arrive early or late.
Viola founded the business in 2014 together with his partner, Umberto Mascagni, and today oversees the brand as its corporate chef, a role that has taken him from a single back-office kitchen in South Beach to cooking demonstrations as far afield as a Royal Caribbean cruise, where he competed as a guest chef in the line's Royal Chef competition.
03The cooking
Every pizza at Mister O1 begins with dough that is left to ferment naturally for 72 to 96 hours, with no sugar added to either the dough or the tomato sauce, before being stretched thin into a 13-inch disc and fired until the crust is light and crisp at the edge. Most of the cheese and cured meat is imported from Italy, with the rest sourced locally, a balance Viola has kept since the first location opened.
The kitchen runs its own burrata bar alongside the pizza oven, pulling fresh stracciatella to order for the pies and salads that carry it, and the same dough that forms the classic rounds is shaped into the restaurant's trademark star, its points filled with ricotta rather than left plain.
04What to order
The signature is the Star Luca: a 13-inch star-shaped pizza with ricotta tucked into pockets at each point, built on tomato sauce, mozzarella, spicy salami calabrese and basil. The Star Carlos follows the same star shape but swaps toward Tex-Mex, with chorizo sausage, tomatoes, arugula, avocado, parmesan and a jalapeño sauce.
From the white-pizza side, the Claudio pairs fresh burrata stracciatella with white truffle oil and basil over tomato sauce, while the Coffee Paolo is the kitchen's more unusual pairing of gorgonzola, natural honey, coffee and spicy salami calabrese. At the burrata bar, Burrata e Crudo sets a whole sphere of burrata with Prosciutto di Parma and tomatoes alongside warm rosemary focaccia. To finish, the Nutella Pizza takes the same signature dough, baked lightly and topped with Nutella and powdered sugar.

05When to go and booking
The South Beach restaurant does not take reservations; it operates on walk-ins only, so arriving before the evening rush or just after opening helps avoid a wait at the door. In October 2026 its own site listed hours as Monday to Thursday 11:30am to 10pm, Friday 11:30am to 11pm, Saturday 12pm to 11pm and Sunday 12pm to 10pm. The MICHELIN Guide places it in the moderate-spend category.
06The neighbourhood
The restaurant sits a short walk from Lincoln Road Mall, South Beach's pedestrian spine of shops and cafés, though Mister O1 itself remains easy to miss unless you already know which office building to enter. What began as a single room has since grown into a chain of roughly thirty locations across Florida, Texas and Georgia, run through a mix of franchised and corporate-owned restaurants, while the South Beach original keeps its founding status as the flagship.
For anyone who wants to learn the technique rather than just eat the result, Mister O1 also runs a Pizza School, with hands-on classes for amateur cooks in Miami, Dallas and Atlanta, taught by the same kitchen team behind the dough recipe used on Michigan Avenue.
