On a modest stretch of First Avenue in the East Village, Momofuku Noodle Bar opened in the summer of 2004 with financial backing from chef David Chang's father, and it changed more than one career. Chang had trained at the French Culinary Institute, worked the phones at Tom Colicchio's Craft, moved to Japan to cook in a small soba shop and at Tokyo's Park Hyatt, before deciding he had grown "completely dissatisfied with the whole fine dining scene." What he opened instead was tiny, loud and cheap — a counter that the New York Times would later credit with causing "the slurp heard round the world." Twenty-two years on, the original East Village room holds a Bib Gourmand in the MICHELIN Guide, confirmed for 2025, the distinction for a satisfying meal at a moderate price. Chang remains Chef and Founder; the business is run day to day by chief executive Marguerite Zabar Mariscal, who started at Momofuku as an intern in 2011.

The East Village flagship that started the Momofuku group, still serving ramen and pork buns from an open kitchen.
01The room and the setting
The flagship sits at 171 First Avenue, between 10th and 11th Streets — a narrow, high-energy space of blond-wood communal tables and stool-lined counters, with seats at the bar and open kitchen where you can watch the noodles come together. It is loud, fast and unfussy, the mould every later Momofuku room has borrowed from. The East Village address has history: in 2007 Chang moved Noodle Bar to a larger space up the street and installed Momofuku Ko, his tasting-menu restaurant, in the original spot.
The room now seats 68, or up to 60 for a stand-up reception, and Momofuku offers full buyouts here for lunch, dinner and happy hours — though there is no separate private dining room at this location, so a buyout means the whole restaurant.

02The chef
David Chang is Chef and Founder, recognised by Esquire as one of the most influential people of the 21st century, with six James Beard Awards, a GQ Man of the Year title and a Time 100 place to his name; he now also hosts the podcasts The Dave Chang Show and Recipe Club, and has written the cookbooks Momofuku and Cooking at Home alongside his memoir Eat a Peach.

Marguerite Zabar Mariscal runs the group today. She joined Momofuku as an intern in 2011, took on design and communications, was named Brand Director in 2016, became Chief of Staff and Creative Director in 2018, and has been CEO since 2019.
03The cooking
Noodle Bar is widely credited for popularising ramen in America and growing it into an international style of eating, built on what began as ambitious Asian-inflected cooking — a finely tuned mesh of Japanese, Korean and other cuisines served without ceremony. The kitchen still runs a constantly changing roster of noodles, steamed breads, soft serve and daily dishes rather than a fixed menu.
The pork belly bao remains the restaurant's calling card, one of the dishes that made Chang famous and that still lives up to its reputation after two decades on the counter.
04What to order
From the current menu: the weekend-only Steak Kimbap; steamed buns filled with pork belly, shiitake mushroom or shrimp patty; Garlic Chicken Ramen with baby spinach and a poached egg, or Smoked Pork Ramen with bamboo; Ginger Scallion Noodles with pickled shiitake and wakame; and, among the mains, Crispy Spring Chicken or Lobster Crispy Rice with poached egg and watercress. For dessert, Banana Soft Serve or the Milk Chocolate Pie with pecan and dulce de leche. For a group, the large-format Fried Chicken Meal — two whole birds, Southern-style and Korean-style, with favourite sides, priced at $225 and ordered ahead through OpenTable — remains the house showpiece.

05When to go and booking
Noodle Bar East Village opens Monday to Thursday from 5pm to 10pm, Friday for lunch from midday to 4pm and dinner from 5pm to 11pm, Saturday from 11am to 4pm and 5pm to 11pm, and Sunday from 11am to 4pm and 5pm to 10pm. Reservations run through OpenTable, and the restaurant keeps limited walk-in seats at the bar and kitchen counters for anyone happy to wait.
06The neighbourhood
This is the East Village, not the newer Uptown branch at Columbus Circle, and the nearest subway is the L train to First Avenue. After more than twenty years, half a dozen James Beard wins and nominations, and its MICHELIN Bib Gourmand, Noodle Bar is still treated as a fixture of the neighbourhood rather than a relic — the restaurant that, in Chang's own telling, he only ever expected to survive a single year.
