On rue de la Paix, two minutes from Place Vendôme, inside the colonnaded calm of the Park Hyatt Paris-Vendôme, PUR' is chef Jean-François Rouquette's own dining room. At the helm of the Park Hyatt Paris Vendôme since 2005, this son and grandson of restaurateurs who moved to Paris from Aveyron learned the basics of the trade from his mother. It holds one MICHELIN Star, and since the autumn of 2024 it has worn an entirely new skin, built with artist-architect Hugo Toro around the way Rouquette actually cooks. The effect is discreet rather than loud, a palace restaurant that behaves like a private address. His longtime second Ai Okabayashi, with whom he won his first Michelin star, and pastry chef Naraé Kim complete a kitchen that has stayed remarkably settled for a Paris grand hotel, cooking a cuisine built on produce treated with patience rather than spectacle.

Jean-François Rouquette's restaurant within the Park Hyatt Paris-Vendôme, redesigned in 2024 by artist Hugo Toro.
01The room and the setting
The new room was revealed in autumn 2024, the result of a collaboration between artist-architect Hugo Toro and the starred chef. Toro drew everything himself, with the same attention to detail as a starred chef — from the napkin rings and the patina on the chairs to canvases depicting Bacchus and the cut of the staff uniforms. The restaurant describes itself as the confidential, made-to-measure table of Place Vendôme, and Toro treated it accordingly, designing the single-flower vases, the knife rests, the butter pot and knife, down to the candles that mark the beginning and the end of the meal, as if staging a small piece of theatre at every table.
Set apart from the main room, a raised Chef's Table sits on its own podium, connected directly to the kitchen pass and the brigade at work, reserved for six guests who watch each course leave Rouquette's hands before it reaches the table.
02The chef
Born in 1966 in Espalion, Aveyron, Rouquette cut his teeth as a commis at Le Petit Riche in Paris before joining the Hôtel de Crillon, then working under Christian Willer at Le Martinez, where he was captivated by an artisan chef who used only exceptional produce. He took his first head-chef post at La Cantine des Gourmets, delighting Paris for six years with a cuisine that was classic yet personal, before arriving at the Park Hyatt Paris Vendôme at the end of 2005, where he has stayed ever since.
Insider tipDinner only, Tuesday–Saturday, 19:00–21:15; book ahead for the six-seat Chef's Table.
The restaurant carries one MICHELIN Star and four toques from Gault & Millau, and in 2022 Rouquette received the Gault et Millau d'Or trophy. He cooks alongside Ai Okabayashi, his longtime second since their years together at La Cantine des Gourmets, where the two won his first Michelin star, and pastry chef Naraé Kim, named Pâtissière de l'Année 2024 by Gault & Millau after ten years travelling for Hyatt worldwide and a first French posting with Yannick Alléno, before joining Rouquette's kitchen in 2021.
03The cooking
Rouquette works to preserve the quality of his produce, favouring slow cooking and fermentation that reveal the nuance in each ingredient without ever disguising it.
04What to order
The current menu moves from raw yellowtail with black radish and oscietre caviar and burrata with horseradish, in a fermented cucumber and shiso broth, through blue lobster poached in a coconut-water bouillon with watermelon cucumber, lovage oil and lime, and scallops from the Emerald Coast with celery, miso and Sauternes, to squab from Mesquer with smoked corn velouté, sweet pepper chutney and salmis jus, and wagyu grilled over charcoal with a Bercy condiment and soufflé potatoes. The menu also carries a standing classic, lièvre à la royale in the Périgord style with a mousseline of Belle de Fontenay potato and Bordier butter. Dessert runs to black figs "Ronde de Bordeaux" with a fig-leaf bricelet, coconut-water sorbet and a juniper-roasted fig, or a cheese trolley from the fromagerie Marie Quatrehomme.

05The neighbourhood
Rouquette has earned his stripes as an honorary Parisian after forty years in the city, and for half of that time he has cooked in one of its most splendid quarters, steps from Place Vendôme. The rue de la Paix address places PUR' within walking distance of the Opéra Garnier and the jewellers' windows of Place Vendôme, a setting that matches the restaurant's own claim to be a confidential, tailor-made table rather than a grand-hotel showpiece.
06When to go and booking
PUR' serves dinner only, Tuesday to Saturday from 19:00 to 21:15, according to the restaurant's own site in October 2026. Because the kitchen adjusts its menu to what arrives from the market, it is worth asking at the time of booking which dishes are currently running, and reserving ahead for the six-seat Chef's Table, which takes a single sitting each evening.
