Rosette – a Lyonnais bouchon earns Clichy its Bib Gourmand

Rosette opened on rue de Paris in Clichy in May 2023, the first restaurant that Camille Aldon and Arthur Auguy opened together after years spent cooking and pouring wine in some of Paris's most demanding kitchens. Auguy runs the stoves while Aldon looks after the dining room and the wine list; the couple met at Le Meurice, the Parisian palace hotel, before passing through Mandarin Oriental, Lasserre, Le Saint-Sébastien Paris and Substance. Close to the Mairie de Clichy métro station, the restaurant pairs a vintage, Lyon-inspired setting with seasonal, bistronomic cooking. It holds a Bib Gourmand, the MICHELIN Guide's distinction for good cooking at a fair price, a status earned within a year of opening and renewed again in the 2026 selection — recognition that this small suburban room now sits among the better-value tables anywhere near the capital.

Chef Arthur Auguy and sommelier Camille Aldon run this counter-seat bistro near Mairie de Clichy.

01The room and the setting

The address is pocket-sized, built around a counter where the chef works in full view, in a room that borrows the warmth of a Lyonnais bouchon without copying it outright. Modern furniture sits next to carefully chosen antiques — faience pieces and a vase anchor a small library at the centre of the room. The restaurant's own description points to the same mix of materials: wood, porcelain and copper, laid out for a crowd that comes for the cooking as much as the conversation.

02The chef and the kitchen

Arthur Auguy trained in some of the capital's most exacting houses before deciding, with Aldon, to open somewhere of their own. The pair's CV runs through Mandarin Oriental, Lasserre, Le Meurice, Le Saint-Sébastien Paris and Substance — a line-up of palace hotels and serious bistros that shows in the control on the plate. Rosette itself came together partly through crowdfunding, the kind of grassroots financing that suits a restaurant built on personal history rather than outside investors. It was their first restaurant, opened in May 2023, and the one they still run together today: Auguy in the kitchen, Aldon on the floor and the wine list.

Insider tip

Closed Saturday lunchtime and Sunday; booking recommended given the small, counter-led room.

03The cooking

The kitchen works to a short, weekly menu, updated week by week, each version offering a fixed-price route through starter, main and dessert alongside a handful of dishes billed as 'retour du marché' — built around whatever arrived fresh that morning. Every product is sourced from organic or reasoned farming, and all the meat on the menu is French, a point the restaurant states plainly on its own site rather than treating it as a marketing line.

04What to order

The chocolate cake is served in individual cocottes, sized so two, four, six or eight people can share one pot at the table — a dessert built for a long lunch rather than a quick plate. On the printed menu, look out for the pâté en croûte of pork, duck and poultry with pickles, a beef tartare sharpened with curry, lime and fried onion, roast monkfish meunière with green asparagus and a lemon-butter sauce, and confit-then-grilled chicken thigh with potato purée and watercress.

05Wine and drinks

The wine list runs to around 650 references, assembled by Aldon with an impressive cellar built on growers rarely seen on restaurant lists, alongside small discoveries worth seeking out. The list opens, in print, with a line from Alexandre Dumas on wine as the intellectual part of a meal — meat and vegetables, in his view, merely the material part.

06When to go and booking

Rosette opens Monday to Friday from midday to 2pm and from 7.30pm to 10pm, and on Saturday evening from 7.30pm to 10.30pm; it is closed on Sunday and Saturday lunchtime. At lunch, the fixed menu runs at 23€ or 27€, while in the evening the kitchen serves a five-course tasting menu alongside the à la carte. Given the counter seating and the room's modest size, booking ahead — by phone or through the restaurant's own site — is the sensible move.

07The neighbourhood

Clichy has not traditionally been thought of as a place to eat well, but Rosette is one of a new wave of bistros changing that. The restaurant sits a short walk from the Mairie de Clichy stop on line 13, putting it within easy reach of Porte de Clichy and the edge of the 17th arrondissement, while remaining, in price and in temperature, a neighbourhood table rather than a destination restaurant.
