Sailor opened on a corner of DeKalb Avenue in Fort Greene, Brooklyn, in September 2023, and it arrived carrying more weight than most restaurant launches that year. The spiffy corner spot marked chef April Bloomfield's return to the kitchen and restaurateur Gabriel Stulman's first restaurant in Brooklyn. Bloomfield had been one of New York's defining chefs for more than a decade, running the kitchen at such seminal spots as The Spotted Pig, The Breslin and John Dory before sexual harassment allegations against her business partner at the time, Ken Friedman, ended that chapter of her career. At Sailor, working again with Stulman, whose Happy Cooking Hospitality group also runs Jeffrey's Grocery, Joseph Leonard and Fairfax, she cooks a short, seasonal menu of plainly titled dishes handled with evident care. Sailor is Selected in the MICHELIN Guide, and sits in the special-occasion price bracket: modest ambition, precisely executed, is the whole point.

01The room and the setting

The design is the work of Alfredo Paredes, the longtime creative director at Ralph Lauren, and it shows in the crisp linens, the blue trim, the leather-topped bar stools and the closely hung collection of cheeky nautical paintings and prints. The effect is of a yacht club that has sensibly relocated a few blocks inland. It is a compact corner room rather than a grand reinterpretation of a Paris bistro, and that scale matters: Sailor is built to feel like a neighbourhood restaurant even on nights when demand for its tables runs well beyond the neighbourhood.

02The chef

Bloomfield was born in Birmingham, England, in 1974 and trained in London kitchens including the River Café and Bibendum before crossing the Atlantic. She opened The Spotted Pig in 2004, fresh from the River Café, cooking in a way that created a template for the gastropub phenomenon that followed. She went on to open a second restaurant in the Ace Hotel called The Breslin, which later also won a Michelin star, and an oyster bar inside the same hotel, The John Dory Oyster Bar. The Spotted Pig closed for good on 26 January 2020, not long after allegations against Friedman became public, and Bloomfield stepped back from New York kitchens. Sailor, which grew out of a years-long friendship with Stulman, is her first restaurant since. Day to day, she now shares the pass with executive chef Skylar Mosca.

Insider tip

Dinner nightly from 5pm; lunch Wed–Fri; brunch Sat–Sun. Book ahead.

03The cooking

The menu reads like classic New York bistro — a branzino, a Caesar, a roast chicken — but the technique underneath is exacting. The kitchen's recurring trick is to take one perfectly handled piece of protein, whether fried pig's head, beef tongue or a fillet of cod, and pair it with a single, essential sauce and little else. The full seasonal menu, including the roast chicken and the Caesar salad that have drawn the most attention, is reserved for dinner, while lunch keeps its own, smaller repertoire. It is cooking that trusts a short ingredient list to do the work, which is exactly what made Bloomfield's name in the first place.

04What to order

The dinner menu is reprinted for each stretch of service — the sheet read for this story was dated October 2026 — and runs from small plates into a short list of mains. Puddings stay simple — ginger cake with vanilla cream, profiteroles with ice cream and caramel sauce, a chocolate tart with crème fraîche — the kind of list that asks for restraint and then makes it impossible.

05Wine and drinks

The wine list is overseen by general manager and wine director Luke Sullivan, running from easy drinkers through classics to funkier, more esoteric selections, as read on the restaurant's own site in October 2026, while bar director Tito Gonzalez runs the cocktail side. A dedicated social hour operates Friday to Sunday from 2pm to 5pm, offering an earlier, looser way into the room before dinner service begins.

06When to go and booking

Dinner runs nightly from 5pm, closing at 10pm Sunday to Wednesday and 10.30pm Thursday to Saturday; lunch is served Wednesday to Friday from 11.30am to 2pm, and brunch Saturday and Sunday from 10am to 2pm, all read on the restaurant's site in October 2026. Two months after opening, Helen Rosner reviewed the restaurant for The New Yorker under the headline 'April Bloomfield's Quietly Triumphant Return,' and by December Pete Wells had placed it on The New York Times' list of the city's twelve best new restaurants of 2023. That attention has not faded: lines around the corner of DeKalb Avenue have become a documented feature of the neighbourhood rather than a passing opening-week phenomenon, so booking ahead, especially for dinner, is close to essential.
