Behind an unmarked door at 33 rue Jean-Goujon, two streets from the Champs-Élysées, Trente-Trois occupies the ground floor of Maison Villeroy, a mansion built in 1908 and restored, with design by Atelier Alain Ellouz for the Wainbridge Estate, to create a private-mansion experience. Reserved at first for residents and club members, the restaurant opened its doors to outside clientele in September 2020. Chef Sébastien Sanjou, who had earned his first MICHELIN Star in 2013 at just 31, at Le Relais des Moines, joined the team of Maison Villeroy in Paris in 2019, making Trente-Trois a discreet dining choice in the exclusive Golden Triangle, and in January 2021 he was awarded one MICHELIN Star by the famous red guide for his Parisian address. It holds one MICHELIN Star. Behind the panelling of the dining room, Sanjou now cooks an increasingly Mediterranean repertoire, sharpened since November 2025 by a reinvented carte marking five years of the starred table.

Chef Sébastien Sanjou cooks a Mediterranean-leaning menu for a handful of tables inside Maison Villeroy, near the Champs-Élysées.

01The room and the setting

Maison Villeroy keeps just eleven rooms, offering a more personal experience than even larger boutique hotels, while also serving as a private club to local members. Diners reach Trente-Trois through the hotel's own discreet entrance, just off the Champs-Élysées, and the restaurant reveals only a few covers at lunch and dinner inside its intimate, wood-panelled dining room. Wood panelling, mirrors and an ornate ceiling frame the space, a few streets from the chic quiet of avenue Montaigne in the heart of the Golden Triangle.

02The chef

Sébastien Sanjou comes from a family of restaurateurs, and in 2002, at just twenty, he opened his own restaurant in a renovated sixteenth-century sheep farm in the heart of the Var region. At the head of that restaurant, Le Relais des Moines, he earned his first Michelin star in 2013 at just 31, promoting farm-to-table cooking built on close relationships with local producers. In 2019 he took on Maison Villeroy's kitchen, bringing his attachment to the South of France into the exclusive Golden Triangle, and the Paris address was starred within eighteen months.

Insider tip

Closed Sunday and Monday; booking essential given the restaurant's handful of tables.

03The cooking

Trente-Trois marked its fifth anniversary as a starred table in November 2025 with a reinvented carte, signing the start of a new chapter. The kitchen now leans into an instinctive, of-the-moment Mediterranean cuisine shaped day to day by executive chef Alexis Bonnard, offered through two lunch menus (two or three courses) and two dinner menus (four or six courses), alongside a carte that reveals Sanjou's long-standing attachment to the South.

04What to order

From the new carte: Lou Saussoun varois with focaccia; red mullet with fennel, seaweed and a sea urchin sabayon; and blue lobster with pistou and a coral-stained bisque. Among the meats, poularde from producer Pierre Duplantier shares the board with venison and other feathered game, while wild mushrooms, cooked and raw, arrive with confit garlic and rocket for a vegetal course. To finish, farm honey with buttermilk and pollen, or a confit Reine des Reinettes apple with sweet vernal grass and a Provençal trou.

05Wine and drinks

The cellar is overseen by four sommeliers, led since July by new chef sommelier and restaurant director Micaël Morais, previously of Tomy&Co, Guy Savoy, Le Meurice and the Hôtel Saint James. The wider selection answers to Xavier Thuizat, Meilleur Sommelier de France and Meilleur Ouvrier de France 2022, who also created the adjoining wine bar Grappille, where legendary bottles meet gastronomic finger food. Under its own glass roof, the hotel's pocket bar also pours deliberately private signature cocktails for guests who want to extend the evening without leaving the address.

06When to go and booking

Trente-Trois serves lunch and dinner Tuesday to Saturday; smart dress is expected and small dogs are welcome. Because the room holds only a handful of tables, booking ahead matters.

07The neighbourhood

The address sits inside the Golden Triangle, near the chic quiet of avenue Montaigne, a short walk from the Champs-Élysées. The nearest metro station is Alma-Marceau.
