Una Pizza Napoletana – one oven, one cook, one dough a day

On Orchard Street, Anthony Mangieri still mixes, shapes and bakes every pizza himself, three decades into a project that now holds a MICHELIN Bib Gourmand.

On Orchard Street, in the heart of the Lower East Side, Anthony Mangieri still does what he has done every working day since 1996: he mixes the dough, shapes each disc by hand, and feeds it into a single wood-fired oven himself. Una Pizza Napoletana reopened on this corner of the Lower East Side in 2022 after a full rebuild of the space, closing a loop that ran through Point Pleasant Beach, Manhattan's East Village, San Francisco and, briefly, New Jersey. The menu has stayed as narrow as the room: a handful of starters, three pizzas, and a short run of desserts made in-house. It holds one MICHELIN Bib Gourmand, the Guide's mark for cooking that is both skilled and fairly priced. The restaurant first earned the title of best pizzeria in the world from 50 Top Pizza in 2022, sharing it with I Masanielli from Caserta, before falling to second place in 2023 and reclaiming the top spot since. For a restaurant built on one oven, one cook and a dough count fixed hours in advance, that reputation now runs well ahead of the seats available.

Anthony Mangieri's single-oven pizzeria, naturally leavened dough made by hand every day since 1996.

01The room and the setting

The dining room is deliberately small and plain, so that two things carry it: an open view onto the wood-fired oven, where Mangieri works through every service, and walls hung with one-of-a-kind artworks, many of them made over the years by friends of his.

Reviewing the Orchard Street address in 2022, The Infatuation described the space as sparse but comfortable, with a jazzy James Bond-esque soundtrack, and a poster of the Italian The Good, The Bad and the Ugly in the bathroom, a detail that has stuck with regulars ever since.

02The chef

Mangieri was raised in New Jersey in an Italian-American family and began searching the tri-state area for the best pizza as a teenager, a habit that eventually became a career. At twenty-two he opened Sant'Arsenio, a small bread bakery in Red Bank, before founding Una Pizza Napoletana in Point Pleasant Beach in 1996.

Insider tip

Reservation-only; tables released two weeks ahead at 9am ET on OpenTable.

The project moved to Manhattan's East Village in 2004, to San Francisco in 2010, back to New York in 2018, briefly to New Jersey between 2020 and 2021, and finally to Orchard Street in 2022, where it now stands as his only address. New York Times critic Pete Wells reviewed the restaurant in June 2019 under the headline "A Stand-Up Example of Sit-Down Pizza", one of several reviews that have followed Mangieri from coast to coast and back.

The Lower East Side iteration has gone on to top 50 Top Pizza's world ranking in 2022, shared with I Masanielli from Caserta, before slipping to second place in 2023 and returning to first in the years since.

03The cooking

Every stage happens at one pair of hands: Mangieri ferments and shapes the dough each morning, then bakes only a few pizzas at a time in the wood-fired oven, in full view of the room. The pizzas keep to the Neapolitan canon rather than inventing around it.

There is a Marinara of san marzano tomatoes, extra-virgin olive oil, oregano, fresh garlic, fresh basil and sea salt, a Margherita of san marzano tomatoes, buffalo mozzarella, extra-virgin olive oil, fresh basil and sea salt, and a Filetti of fresh cherry tomatoes, buffalo mozzarella, fresh garlic, extra-virgin olive oil, fresh basil and sea salt, built without cooked tomato sauce.

04What to order

With the dough count fixed before the doors open, there isn't much room for indecision. The Margherita and the Marinara remain the benchmarks; the Filetti is the one worth ordering to see how far restraint can go without a cooked sauce at all.

To finish, the kitchen turns out a short run of desserts that has included Tiramisu and Panna Cotta, alongside ice cream made daily and a seasonal sorbetto.

05Wine and drinks

The list stays as tight as the kitchen: a focused run of Italian beer and wines from Campania and Champagne, chosen to sit alongside the pizza rather than compete with it.

06When to go and booking

Una now runs on reservation-only service, with tables released two weeks in advance at 9:00 AM ET on OpenTable. They fill fast simply because demand is greater than the number of seats available, so setting an alarm and using the platform's notify feature for cancellations helps.

The room is open Thursday, Friday and Saturday at 5 pm, with the last reservation at 9:45 pm. Guests are always welcome to stop by for drinks or small bites if they don't have a dinner reservation, and the restaurant takes full buyouts for up to 120 guests, seven days a week, for private events.
