On Hohwacht Bay, an hour's drive from Hamburg, Weissenhaus Private Nature Luxury Resort gathers more than forty buildings, some of them listed, across 75 hectares of parkland, woodland and private Baltic beach around a manor estate four centuries old. Just one hour from Hamburg lies the Private Nature Luxury Resort WEISSENHAUS, a very special retreat amidst the natural setting of Hohwacht Bay, spread over approximately 75 hectares with more than 40 buildings, some of which are listed. Once an aristocratic residence, it has been lovingly restored as a retreat for the soul. A maximum of 120 guests at a time enjoy its spa and culinary offerings in a direct beach location. The 59 individual suites and rooms are spread across eleven buildings, restored with great attention to detail based on historical models. The MICHELIN Guide awards Weissenhaus Two MICHELIN Keys, recognising a stay built on restored heritage architecture, a substantial spa and kitchens ranging from beachfront Mediterranean cooking to Asian-inflected fine dining inside the castle itself.

Eleven historic buildings, a 3,000 m² spa and Asian-inflected dining in the castle, an hour from Hamburg.

01The house

Weissenhaus takes its name from the white manor at its centre, part of an estate with four centuries of history on this stretch of the Baltic coast. Guests can immerse themselves in the 400-year history of Weissenhaus during a guided tour of the estate. Technology entrepreneur Jan Henric Buettner bought the property in 2006 and has since rebuilt it structure by structure, keeping each building's original character and use as a guide rather than converting them into a uniform hotel block.

Spread over the 75 hectares, more than 40 buildings, some of which are listed, survive on the grounds – former farm cottages, a boathouse, stables and outbuildings now doing duty as suites, spa rooms and restaurants rather than one single hotel wing. It is this patchwork of restored structures, set among lindens and reed-thatched barns, that gives Weissenhaus its particular, unhurried character.

02Rooms and suites

The 59 individual suites and rooms, like the restaurants, are spread across eleven buildings on the grounds and have been restored with great attention to detail, based on historical models and inspired by their original use. Each room carries its own spirit and décor scheme, but all accommodations feature bathrooms with rain showers and/or free-standing bathtubs.

Insider tip

Adults-focused resort; dogs welcome only at Bootshaus; book the estate history tour on arrival.

At the top of the range, the Weissenhaus Signature Suites, up to 150 square metres with two bedrooms and two bathrooms, offer guests the highest level of comfort. The Signature Villa, the largest category, sleeps up to twelve guests and has its own Jacuzzis and saunas in a private garden, plus several terraces. Smaller and closer to the water sits the Badehäuschen, a free-standing bathing-hut room with its own tub and shower, a favourite for couples wanting direct dune access rather than castle grandeur.

03Where to eat

Mornings start at Kavaliershaus, which serves a gourmet breakfast overlooking the park. By evening, the historic castle now houses NAMI; guests describe it as the resort's new Asian-inspired restaurant, stylishly designed.

NAMI occupies the dining room once held by Courtier, which for years carried two MICHELIN stars and 18 Gault Millau points, serving refined dishes in the historic picture room overlooking the paddock towards the Baltic Sea. Christian Scharrer became its head chef in June 2016, and Falstaff rated his classic gourmet cooking with modern accents 96 points. Courtier has since closed; listings now mark it Fine Dining Restaurant Courtier – Closed.

Down on the sand, Bootshaus brings Mediterranean ambience and a relaxed flair, with spacious terraces, sea breeze and sunsets recalling warm Mediterranean summer nights, from a dining room at Strandstraße 4.

04The bar

Much of the after-dark life happens inside the castle, where a library, smokers' lounge, billiard room, a mirror hall with chimneys and a cinema surround an elegant vaulted bar. It is the kind of room built for a slow brandy rather than a crowd, with fires lit through the colder months and views back across the park.

05Spa and wellbeing

The Schlosstherme spans 3,000 square metres inside one of the historic buildings, with a further 1,000 square metres outdoors, and runs six different saunas alongside a 20-metre pool, indoor and outdoor, set in the castle garden beside an open-air fireplace. A saltwater forest room and an onsen bath surrounded by greenery complete the spa experience.

Falstaff gives the hotel 100 points, singling out its holistic spa offerings, including a hammam, as a particular highlight.

06The neighbourhood

Weissenhaus faces Hohwacht Bay directly, on a three-kilometre stretch of natural Baltic Sea beach, about an hour from Hamburg. Inland, the grounds sit close to the Weissenhauser Brok nature preserve, and the Hohwachter Bay Golf and Country Club borders the estate for guests who want eighteen holes between spa appointments.

07Making the most of a stay

Weissenhaus presents itself primarily as a retreat for adults seeking relaxation, spa and culinary connoisseurs, so book the guided walk through the estate's 400-year history on arrival rather than leaving it to the last day.
