On the first floor of the Samaritaine building, with windows facing the Seine, it is the sauces that carry the dinner. Plénitude at Cheval Blanc Paris was awarded three stars as early as its first year.

On the menu at Plénitude, the dishes aren't listed as usual. They're listed as ingredients followed by a sauce with its own name: mullus, boulanger potatoes and sea urchin for the fumet «bravade», sole, abalone and caviar for the broth «ode à l'iode». This is Arnaud Donckele's way of showing where the emphasis lies. The sauce is the backbone, not the accompaniment.

Plénitude opened in autumn 2021 at Cheval Blanc Paris, the hotel in the Samaritaine building on the quai du Louvre in Paris 1st arrondissement. Already in the 2022 guide, during the restaurant's first year, it was awarded three stars in the Guide Michelin. In the 2026 French guide, it retains all three.

01The sauce with a French signature

Restaurant critic Gilles Pudlowski, who dined at Plénitude a few weeks after the opening, described the sauces as spices to drink and recalled Escoffier's words about sauce as the signature of French cuisine. Slate has called them the backbone of Donckele's cooking.

It recurs throughout the entire menu. A vegetable dish is served with a coulis called «Jade», pigeon with a jus called «délicatesse», langoustine with a vinaigrette called «cornaline». The names are poetic, but the technique behind them is classic: stocks, reductions and emulsions of the kind that French cuisine has built its reputation on.

02Arnaud Donckele – two restaurants, six stars

Arnaud Donckele was born in Rouen in 1977 and trained under Michel Guérard, under Alain Ducasse at Le Louis XV in Monaco and at Plaza Athénée, and under Jean-Louis Nomicos at Lasserre. Since 2004, he has led La Vague d'Or in Saint-Tropez, which has held three stars since 2013.

With Plénitude he was awarded a further three. He therefore has two three-star restaurants, one by the Mediterranean and one by the Seine, both in LVMH's hotel collection Cheval Blanc. In the 2026 guide, Hakuba, the Japanese restaurant at Cheval Blanc Paris, was also awarded two stars.

03The room on the first floor facing the Seine

Plénitude is located on the hotel's first floor, with a view of the Seine. According to Slate, the dining room seats 26 guests, and the room is described as intimate. The hotel's interiors were designed by the American architect Peter Marino, and in Plénitude he has signed a wall of glass bubbles.

The team around Donckele has been part of the restaurant's profile from the start. Pastry chef Maxime Frédéric, whom Pudlowski calls a magician with sweets, is responsible for the desserts. At the opening, the dining room was led by Alexandre Larvoir and the wine by sommelier Emmanuel Cadieu.

04Samaritaine and Cheval Blanc Paris

Samaritaine is one of Paris's most famous department stores, and when the building reopened in 2021 after a lengthy renovation, it gained a hotel in the section facing the river. Cheval Blanc Paris has 72 rooms and suites and Palace status, Atout France's highest classification. The architect Édouard François worked on the building and Peter Marino on the interiors.

The location makes it easy to combine dinner with a stroll. Pont Neuf is right outside the door, the Louvre a few minutes away, and Île de la Cité on the other side of the bridge. More about the neighbourhood can be found in VERA PI's guide to Paris, and more restaurants and hotels in the city are gathered on metromode.co. Donckele's other kitchen is portrayed in our story on La Vague d'Or in Saint-Tropez.

05How to plan your visit to Plénitude

With only 26 seats, Plénitude is hard to get a table at, so book well in advance. Ask for a table by the windows facing the Seine, and feel free to let the sommelier suggest wines for the sauces rather than for the ingredient itself – that's how the menu is intended. Check opening days directly with the hotel.
